According to records from the Authority for the Protection of Consumers and Defense of Competition (Acodeco), from January to May 2023, throughout the country, 129 tests have been carried out on restaurant fryers, to verify the state of fat or oil, and 36 did not meet the quality standards established in the technical regulation “RT DGNTI-COPANIT 87-2021, Reusable Edible Oils and Fats”.
Through disposable test tapes, commonly called fat monitors, and which allow an objective diagnosis of the percentage of free fatty acids found in the oils or butter used to fry food, Acodeco carries out these actions in different locations, from all over the world. the country.
For this reason, it is important that consumers are alert to changes in flavors, odors, and colors of the food they obtain in prepared food establishments, since these could be indicative of the decomposition of the oil used.
It has been detected that some economic agents neglect quality controls on reused oils, according to a report by Acodeco. It should be noted that the deterioration of the oil can put the health of consumers who eat the fried products offered by these shops at risk.
