Reynaldo Lee Mathurín, National Director of Food Control and Veterinary Surveillance of the Ministry of Health (Minsa), reiterated to the population to verify the meat product they purchase before consuming it and to know if it is fresh or thawed.
“On many occasions it has been observed in establishments that mix fresh products with thawed ones and it is important that the consumer is aware of which one they want to choose,” Lee said.
In this sense, he stressed that the Minsa seeks that the consumer is not defrauded, on the contrary that they have the security that the responsible economic agent indicates which product is defrosted and which is fresh without failing to mention that both have their food safety characteristics. .
Dr. Lee said he added that it is necessary to differentiate and the consumer must choose, since if he purchases a thawed product and refreezes it, the quality may be compromised as a result of the various freezing processes that the food has undergone.
“Although safety is not compromised by this act or represents a risk situation, there will be a quality commitment because when a product freezes its water particles crystallize and when thawed they cause a situation of change,” he mentioned.
He indicated that under instructions from the Minister of Health, Luis Francisco Sucre, efforts have been made to expand actions with other institutions involved in the issue to establish a project that will be disclosed to economic agents and the population with the purpose of guaranteeing food security.
