They chew it and spit it out: the process of the ancestral drink of yuca chicha in the Ecuadorian Amazon

Deep in the Ecuadorian Amazon, the Waorani tribe keeps its traditions alive through practices that have endured for centuries. One of the most notable is the production of chicha de yuca, an ancestral drink.

The Process of Elaboration

The preparation of yuca chicha begins with the harvesting of yuca, a tuber that is essential in the Waorani diet. The yuca is peeled and cut into pieces, which are then cooked until completely soft. Once cooked, it is mashed until a uniform paste is obtained.

Traditionally, the fermentation process is what distinguishes yuca chicha. Instead of using commercial yeasts, the Waorani employ their own fermentation practices, which include the chewing of yuca by community members.

Human saliva contains enzymes that initiate fermentation, transforming starch into fermentable sugars. After chewing, the mixture is left to rest in a wooden or clay container for several days, allowing the natural fermentation process to take place.

Cultural and Social Significance

For the Waorani, yuca chicha is much more than a drink; it is a symbol of identity and community cohesion. Its preparation and consumption are rituals that mark important events, such as celebrations, meetings and ceremonies. In addition, yuca chicha acts as a means of transmitting knowledge and strengthening social ties between generations.

The consumption of this drink is accompanied by stories, songs and dances that enrich the cultural experience and keep ancestral traditions alive.
