Orange pork loin recipe

Ingredients:

  • 1 kg of pork loin (whole, clean and fat-free).
  • 2 tablespoons of oil.
  • 2 cloves of garlic, minced.
  • 1 medium onion chopped.
  • 1 cup of fresh orange juice (about 3 oranges).
  • 1 tablespoon orange zest.
  • 3 tablespoons of honey.
  • 1/2 cup chicken broth or water.
  • 2 tablespoons of soy sauce.
  • 1 sprig of fresh rosemary (optional).
  • Salt and pepper to taste.

Preheat the oven

Preheat the oven to 180°C to ensure it is at the proper temperature when the pork loin is ready for baking.

Prepare the pork loin

Wash the pork loin well and pat dry with paper towels. Then remove any excess fat if necessary. Season generously with salt and pepper on all sides. If you want, you can do small superficial cuts in the fat to allow the flavors to penetrate better during cooking.

Seal the spine

In a large skillet, place the two tablespoons of oil over medium-high heat. When the oil is hot, add the pork loin and brown it for 5-7 minutes on all sides. The goal is to seal the meat so that it preserves its juices. Once browned, remove the tenderloin from the pan and set aside.

Sauté onion and garlic

In the same pan, add the chopped onion and garlic. Cook over medium heat for about 3-4 minutesor until golden brown and fragrant, stirring occasionally to prevent burning.

Prepare the orange sauce

Add the orange juice, orange zest, honey, chicken broth and soy sauce in the pan with onion and garlic. Increase the heat so that the mixture begins to boil. Reduce heat to medium-low and let sauce cook for 5 minutes, stirring occasionally.

Bake the pork loin

Place the pork loin in a baking dish. Pour the orange sauce over the loin and, if desired, add a sprig of fresh rosemary for flavor. Cover with foil and bake for 25-30 minutes. After this time, remove the aluminum foil and bake another 10-15 minutes so that the meat browns a little more.

Let the loin rest

When the loin is cooked, take it out of the oven and let it rest for 5-10 minutes. This will allow the juices to redistribute and the meat to become more tender.

Cut and serve

Once rested, cut the pork loin into medallions approximately 1 cm thick. Serve them with the orange sauce on top. You can accompany the dish with rice, mashed potatoes or a fresh salad.
