MIAMI, United States. — The Las Tunas Fishing Company will resume the manufacture of cassava flour croquettes in that province, reported the telecentre Tunas Vision.
According to this local channel, for the realization of the demanded croquettes, cassava flour will be combined with a little wheat flour due to the shortage of the latter throughout the country.
Denia Castillo, general director of the Las Tunas Fishing Company, assured the space Las Tunas vision that the new product has “exquisite quality”.
“We are working with an alternative, which is cassava. We are combining the cassava with the wheat flour to make the fish croquette. We did a small test, we did 100 kilos and it was of exquisite quality,” said the directive.
However, Castillo warned that the new cassava flour croquettes, absent for several months from the province’s network of fishmongers, will not cost 10 Cuban pesos, as was the case before.
“They will not have the same price because the acquisition price of part of the raw material is not cheap. A pound of cassava costs more than 10 pesos, so the sale price will not be the same. What is not going to be an abusive price or anything like that, ”he added.
The directive assured Tunas Visión that the Company is also producing fish and chorizo hamburgers, a product that had been discontinued due to lack of viscera.
“We are producing chorizo, they are reaching the fishmongers,” Castillo said.
The production of the Las Tunas Fishing Company will be distributed in the network of fishmongers in the provincial capital.
Cuba is going through an unprecedented food crisis, which has forced the island’s authorities to order the manufacture of food with alternative components.
At the end of January, participants in the Second Casabacha ―a culinary event to promote the consumption of cassava in Cuba― presented various foods derived from cassava in Havana, including an ice cream made from catibíamass resulting from grating cassava.
The gastronomic contest was organized by the Mipyme Yucasabi, and had the participation of a representation of the Cuban Culinary Association.
