SuchWhich along with Time (Anzoátegui), Caroní mail (Bolivar), The morning (Falcón), The impulse (Lara), The nation (Táchira), Yaracuy a day (Yaracuy), The truth (Zulia) and Runrunes (Caracas) consulted the prices of the kilo of three of the most purchased beef cuts in seven states of the country, plus the Capital District: Black Pulp, Solomo and Skirt.
The prices were collected in popular markets in Barcelona, Ciudad Guayana, Coro, Caracas, Barquisimeto, San Cristóbal, Independencia and Maracaibo between January 20 and 22. According to the Central Bank of Venezuela (BCV) the exchange rate was quoted between 54.91 and 55.29 bolivars per dollar (Bs/$) in this period.
The most economical option of the three cuts of beef was found in Táchira, where the Solomo has a price that goes from 7 to $ 7.5 ($) per kilo; the black pulp between $ 6.25 and $ 6.75; and the skirt between $ 6 and $ 6.25. While in Yaracuy the highest price for the kilo of Solomo was achieved, between $ 10 and $ 11. Falcón and Lara follow, where the product is sold between $ 8 and $ 10.5. The Solomo is considered a first -folded meat cut for being tender and lending for fast cooking.
In the eight cities consulted, consumers pay between $ 6.25 and $ 10 for the kilo of black pulp. The highest prices were found in Falcón and Zulia. This cut is usually described between first or second meat, depending on the quality of the beef: it is a lean cut, but less tender than the Solomo.
The price of the skirt is between $ 6 (Táchira) and $ 10 (Falcón). This piece is considered second or third meat because it is fibrous: it requires a lot of cooking time to soften. However, well cooked, the skirt can be very tasty, especially in broths and stews.
