The celebrity chef’s flagship restaurant showcases little-known Colombian ingredients, As the copoazu (a genus of cocoa), the fit (an aphrodisiac drink) and the bijao (a plant similar to the banana), while defending local communities and gastronomic traditions.
Leo reopened in a new space in the exclusive neighborhood of Chapinero in June 2021 (Calle 65bis 4-23, Bogotá, Colombia). It has two dining rooms under one roof: one directed by the creativity of chef Espinosa; the other with a more informal bar and restaurant influenced by her daughter and sommelier Laura Hernández Espinosa’s passion for Colombian wines and spirits.

What’s on the menu?
Dinner is divided into an eight- or 13-course tasting menu, complete with dainty appetizers like mussels with coconut and Galerazamba salt, or dried shrimp with snails and ants. The latter, while amazing, are crushed to create a crunchy, nutty garnish on the side of the dish. The main dishes include the calf’s foot jelly, served with coquindo oil (a rare seed from the Amazon) and salt from the Salar de Manuare.
ANDLeo’s menu, called Ciclo-Bioma, focuses on Colombian ecosystems, exploring the ways in which new species can be used in the kitchen. The origin of each ingredient is represented on a map of Colombia showing how far the chef has traveled to source the unique products used at Leo. Those who do not wish to try the extensive wine list can opt for the non-alcoholic drink pairing, which includes refreshing options such as corozo juice or corn drink.
