A total of 72 brands of panettone were certified for human consumption, free of bromatethrough tests that were carried out on 138 samples, reported from the national government.

138 samples of panettone were taken from 73 participating companies, which were sent to the National Institute of Health Laboratories (Inlasa) for toxicological analysis of the bromate parameter, in accordance with the Bolivian Standard NB 39007/2012; only one did not pass the analysis.

The studies were also coordinated with the National Agricultural Health and Food Safety Service (Senasag), which allowed the creation of a single and official list of products safe for consumption, with the aim of protecting the health of the population and providing guidance on the safest products, the government indicated.

Potassium Bromate in Masses

The Vice Minister of Promotion, Epidemiological Surveillance and Traditional Medicine, Max Enríquez, explained that the Potassium bromate is an oxidizing agent and harmful to healthwhich can be used in the preparation of panettone, but could cause: gastrointestinal disorders, alterations in the nervous system and the risk of leading to cancer.

Regarding its effects on flour, he explained that potassium bromate modifies proteins, resulting in a more elastic and resistant gluten. In addition, it improves the water absorption capacity of the flour, which allows for better carbon dioxide retention and a greater volume in the final product. Although it was initially used to enhance the oxidizing properties of flour and strengthen dough, its use has been discontinued due to its health risks.

Recommendations before buying a panettone

The vice minister recommended checking the texture of the panettone before buying it, especially in artisanal products, “which are usually sold at a lower price but of dubious quality.”

The panettone must have a soft texture, fruits should be brightly colorednot opaque, it must verify the production and expiration date, verify if the presence of fungiwhich could be presented due to expiration.

Enriquez indicated that It is best to keep panettone in a cool, dry place. to consume a safe food and thus avoid negative effects on health during the end of year holidays.
