A Potato and leek cream soup is an alternative rich, nutritious and also low price to include in lunches or dinners this winter, which has just begun and it is a time of the year in which intake of this type of hot foods made with vegetables is especially recommended.

Considering additional ingredients (see in the list) and other costs, the total investment is located at a maximum of $100 to serve four people.
The ingredients
- 3 potatoes
- 2 leeks
- 2 tablespoons butter or oil
- 4 ½ cups of chicken or vegetable broth (can also be water)
- ¼ cup of milk
- 2 garlic cloves
- Salt and ground black pepper
Preparation
- Clean the leeks, use only the white part. Cut in half lengthwise and rinse well. Cut into thin slices.
- Peel the potatoes and cut into small cubes.
- Melt the butter in a saucepan over medium heat. Add the garlic and chopped leeks and cook until soft.
- Add potatoes and broth to cover. Cover and cook over low heat until the potatoes are tender. Pass to a blender or with a mixer to crush. Add the remaining broth and milk.
- Rectify seasoning with salt and pepper. Cook over low heat for 5 more minutes.
- Although some extra cost is incurred, also without being high, it can be served with chives or chopped parsley on top; It can be accompanied with crispy bacon crumbs (in a skillet over medium heat, place the bacon slices and cook until golden and crisp); Or you can make croutons with old bread by cutting it into cubes and toasting them in a pan with a little oil.
