They are fried twice: first the banana, then the already armed ball, to achieve that contrast between the crunchy texture and the creaminess of the interior. They usually serve with chili, guacamole or coastal serumwhich further elevates its flavor.

In Huila, this recipe has another name and another way of preparing, but with the same fried soul: it’s called Juan Valerioand although it is also based on banana and chicharrón, here the taste is more aromatic and rustic.

They are used so much green bananas like maturewhich gives a sweeter and creamy mass. The chicharrón cooks slowly in its own fat until it is well golden, without the need for oil.

Then, everything is crushed together: banana, long onion, garlic, coriander … and balls that can also be fry slightly or eat like this, croquette type.

Juan Valerio does not seek to satisfy, but ruralpeasant, with firewood and hands that love with love. Its flavor is more complex: sweet, salty, herbal and with citrus notes if lemon is added to the end.
