In the third unprecedented episode of Kitchen Xodóthat the TV Brasil shows this Saturday (21), at 1 pm, chef Regina Tchelly welcomes environmental engineer Lucas Chiabi. Founder of Ciclo Orgânico, the first collection and composting service for residential organic waste in Brazil, the guest chats with the presenter and prepares three broccoli-based recipes.
During the public broadcaster’s new attraction, Regina and Lucas talk about composting and the complete food cycle. Original content is available in the app TV Brasil Play and can be followed on the public broadcaster’s YouTube.
The relaxed conversation highlights composting as an alternative to organic waste disposal. When there is any part of the food left over that cannot be used in recipes, the remains go to the compost bin and return to the ground.
Also throughout the program, the audience sees the preparation of farofa with broccoli stalks, pasta with broccoli hearts of palm and creamed corn and sautéed broccoli.
A food that can be used from flower to stem, broccoli was one of the first ingredients that Regina Tchelly realized that, with creativity, it could yield several delicious dishes.
