As a celebration, the butchers decided to establish a special offer to celebrate the Day of the Butcher, which is commemorated every July 14: only in traditional butcher shops from that day and for two weeks the rump will be offered at $299 per kilo, with the aim of vindicating the churrasquito al pan.
The fact that the date is July 14 is explained by the fact that commemorates the first time that butchers got together and closed the establishments to get them to give them a higher percentage of profit.

Rafael Rodríguez, vice president of the Union of Meat Sellers (UVC), explained that at that time the profit was 8% “and the butcher practically could not live with that,” he said. After organizing, they managed to increase it to 12%.
“Not that much more was achieved, but all the butchers got together and lowered the curtain, which meant a shock for Uruguayans, due to the importance of meat for the country and its people”, he stressed.
“The Union of Meat Sellers has managed to maintain that hegemony over time. A lot has changed, there are competitions, there are good competitions, there are others, but the butcher remains the same. I always say that when someone wants a good barbecue, they want to have a butcher friend. Because? Because he is the one who is going to give it to him. The butcher cares about his people, ”he maintained.

churrasquito with bread
On the idea of vindicating the use of the traditional churrasco, he recalled: “When we were kids, our parents would open a piece of bread, put a steak inside and eat it. and that is magnificent. So we’re going to celebrate it at the Unión Vendedora de Carne, making the traditional churrasquito. And launching the rump for 15 days at $299 per kilo”, Rodríguez said.
Since 2020, when the pandemic was decreed and as a way to help Uruguayans make their family economy perform better, the UVC decided to start launching promotions every month in exclusive cuts. For this, it carries out constant negotiations with refrigerators and suppliers to obtain good prices that are later transferred to consumers. This butchers’ proposal is three years old since its implementation and a recent example of promotions was when there were promotions for the National Meat Day.
From the UVC it was highlighted that the sector in which they are key players directly and indirectly supports more than 10,000 Uruguayan families.
