Mexico is the main consumer of eggs in the world, a basic product whose price registered, in one week, an increase of 15.3 percent (5.83 pesos), settling at 43.83 pesos per kilo on average on February 3, reported the Service of Food and Fisheries Information (Siap), in daily price monitoring.

He said that the whole chicken increased by 3.12 pesos, compared to the averages registered the same month last year. Despite the price escalation in 2022, production would have an increase of 2.8 percent compared to 2021, reaching 3.1 million tons.

The Siap reported that Mexico is self-sufficient in egg production for dishes; however, it makes seasonal purchases to attend to small lags in the supply. In 2021, it imported 50,433 tons, while it exported 117 tons.

He added that the United States is the predominant nation from which most of the eggs purchased abroad come from.

It should be remembered that poultry production in that country has been affected by the presence of AH5N1 avian influenza and the price of eggs in that nation has risen by 112 percent.

According to the National Union of Poultry Farmers, until 2020, the Mexican poultry industry produced 98 percent of the eggs required by the Mexican market and during the last year it produced 99.9 percent. In the national territory 136 million eggs are produced per day.
