There is no doubt that salads provide a host of health benefits, they are healthy, refreshing and when the high temperatures arrive They are one of the few things that we always want to eat. With walnuts and goat cheese
Ingredients: 2 cups chopped spinach, 1 package of mixed greens, 1 sliced pear, ¼ cup toasted and chopped walnuts, ¼ cup goat cheese, ½ cup dried cranberries. Honey mustard dressing: 4 tablespoons extra virgin olive oil, 1 tablespoon honey, 1 tablespoon Dijon mustard, 1 tablespoon apple cider vinegar, ½ teaspoon grated garlic, salt and pepper to taste.
Preparation: We make the mustard dressing with honey, in the blender uniting the ingredients until a homogeneous sauce is left and we reserve. Arrange the washed and well-dried leaves in a nice bowl, cover with the pear, walnuts, blueberries and goat cheese in pieces, sprinkle with the sauce and bring to the table. It is delicious!
Lettuce with fruit and serrano ham
Ingredients:1 plant of romaine lettuce (optional, mix of lettuces), 1 chopped tangerine, 1 chopped red apple, 4 slices of Serrano ham in pieces, 1 handful of raisins, ¼ cup of extra virgin olive oil, 2 tablespoons of mayonnaise , 1 tablespoon apple cider vinegar, salt and freshly ground black pepper to taste.
Preparation: Chop the lettuce into pieces with your fingers. In a salad bowl we integrate the leaves with the fruits and reserve. Separately, vigorously mix the mayonnaise with the olive oil, the vinegar and season with salt and pepper. Let’s pour this vinaigrette on the salad two minutes before serving.
Purple lettuce with smoked tenderloin
Ingredients: 6 slices of smoked tenderloin (optional, sliced roasted chicken breast), 2 green and red bell peppers, 1 green apple, 1 carrot, 1 onion, purple lettuce leaves. For the sauce: 1 glass of natural Greek yogurt, 3 teaspoons of curry powder, 1 pinch of turmeric powder, salt and pepper to taste.
Preparation: Brown the tenderloin slices in a frying pan with a little olive oil and set aside. Chop the fruits, the carrot, the paprika and the onion, mix it in a container and add the sautéed meat. In a bowl, mix all the sauce ingredients (yogurt, curry, turmeric, salt and pepper) and taste the seasoning, adjust with salt and pepper if necessary. Pour the sauce over the salad and mix well. We can serve with some lettuce leaves, as tacos, or chop the leaves to mix them with the other ingredients. Serve with toasted black bread.
